This September the world’s biggest wing festival will return to Manchester, bringing together the UK’s best for a two-day event celebrating the humble chicken wing.
Set to serve a whopping 200,000 wings over that 48 hour period, expectations are already high for Wing Fest’s return this Autumn.
As it gears up to make its way back to the city, we take a look at some of the winners from years past to give you an idea of what to expect (and who to make a beeline for).
From established restaurants to pop-up concepts launched on furlough, there’s some real variety to be discovered here amongst the street food stalls – making Wing Fest a must-attend event for foodies that are serious about their chicken.
Mexican Seoul
First up we spoke with hall of flame multiple award-winners Mexican Seoul, who have taken home a host of 1st, 2nd and 3rd place awards in recent years.
Founded in lockdown after owner Ashley Chipchase found himself on furlough from his job, Mexican Seoul first attended Wing Fest as customers before deciding to give the street food festival a go themselves.
After winning three awards in a row, he made the decision to quit his job and go pro – right there on stage.

Ashley told The Manc: “After getting furloughed from our jobs we decided to turn a negative into a positive and spent the next 6 months refining our home recipes and trialling different frying methods.
“We ended up juggling a full time job whilst working street food markets at the weekend and prepping into the early hours of the morning.
“We’ve been going to Wing Fest as customers since 2016 and it’s always been a goal to compete. We were lucky enough to be invited down and it really gave us a fantastic opportunity to showcase our menu and we are still blown away we picked up awards.
“When we got invited on stage for three awards it was like a movie. Being recognised for what we do was amazing. They told us to say something on the microphone and we ended up quitting our daytime jobs there and then, on the stage, at Wing Fest.”
Inspired to get into street food by fellow Wing Fest trader Wingman’s after discovering them in 2016, he also tells us he drew inspiration for his wings from the LA food truck scene – naming Korean-American chef Roy Choi as a particularly strong influence.
The signature wings to look out for here at Mexican Seoul are the Gochu-Gang, made spicy with fermented Korean chilli paste then sauced up with added sesame oil, soy sauce and ginger, All made using free range, halal chicken that’s been brined for 24 hours in buttermilk chicken, wings are then double fried to create a signature crispy texture.
That’s not all he does, though, Ashley also serves a range of different Korean-inspired tacos with special sauces made in house from scratch.
Asked how he feels about coming back to Manchester this year, he said: “Each time we visit we notice that the street food scene is growing rapidly… the last time we were there we found an amazing pizza place called Ramona that had one of the best Detroit pizzas we have tried in the UK.
“We never thought we would be showcasing our food across the UK so it feels like an amazing opportunity be able to bring our Gochu-Gang wings to Manchester.”
Yard and Coop
Alongside Mexican Seoul, we also spoke with local Manchester-based winners Yard and Coop who have been a fixture of the Northern Quarter’s culinary scene since 2015.
Owners Laura and Carl Morris took home their first Wing Fest award last year, scooping up third place in the Judges’ Choice Buffalo Wing category but tell us they ‘plan on coming back bigger and better this year.’

The pair, who tell us they have eaten in ‘just about every fried chicken joint in the UK and a fair few in New York and beyond’ say there are plenty of Americana influences to be found in their food before adding: ‘we will literally deep fry anything’.
They’re not kidding. Tihs Easter just gone, they deep fried a creme egg for a special – something that went down an absolute treat with customers.
As for what their Wing Fest signature recipes will be this year, they say they’re ‘still testing recipes’ but will definitely ‘bring that extra level’.
They said: “At wing fest as we 24hr brine them then pressure fry so the meat falls off the bone. Then we buttermilk and crumb them with our secret recipe. Each wing has had so much love before it ends up on your plate!”
“It’s our manor – we are here to bring the title home where it belongs.”

Combining wings, music, beer and bourbon across a two-day celebration of the best chicken wings the UK has to offer, festival-goers can expect to find over 20 different street food traders, restaurants and BBQ teams on site across the weekend.
Drinking around the ‘Beermuda Triangle’ of brewery taprooms in Manchester

If you’re looking for the best pints in Manchester, turn your ass around at the door of the pub and head to the ‘Beermuda Triangle’, a corner of the city centre where taprooms are king.
Our city has a great rep for craft beer and microbreweries, and a lot of these are concentrated in one brilliant, unexpected stretch of industrial estate.
Head beyond Manchester Piccadilly and you’ll find yourself in an area nicknamed the ‘Beermuda Triangle’, where tucked among tool shops and warehouses are breweries welcoming in thirsty punters.
These are places where you can sip on the freshest lagers, ales and sours, straight from the source.
As you kick back in one of these taprooms, you can see the brewers hard at work on their next creation, and see beers being canned before your eyes.
There are, of course, plenty of other taprooms and brewery-operated bars all over Greater Manchester, but if you want to minimise your step count and maximise your drinking time, this is where to head.
So we’ve gone out exploring the current residents on the Beermuda Triangle (I know, tough job) to give you the low-down for your next pub crawl.

Cloudwater
When you think of craft beer, you probably think of these guys.
Since being founded in 2014, Cloudwater has gone on huge things and is now listed among the largest craft beer brands in the UK.
They’ve got their own pub (The Sadler’s Cat), a taproom down in London, and a huge brewery next-door to their taproom on the Piccadilly Trading Estate.
In here, it’s a stripped-back, Scandi-style interior upstairs, with a few extra tables squeezed in amongst oak barrels downstairs, plus a decent suntrap terrace out the front.
Our order? A pint of Fuzzy pale ale.
Track
Track TaproomTrack Taproom
Another big player in the craft beer game, Track’s taproom is comfortably one of Manchester’s coolest bars.
It’s a huge space, split between the actual brewery and the taproom, where beers are displayed on a rainbow-hued menu board and their own merch lines the walls.
With loads of plants, a leafy little beer garden, and a small kitchen that’s home to Slice Culture pizzeria, this one is the least rough-and-ready of all the taprooms on the Beermuda Triangle.
The most logical order here has, and will always be, Sonoma, they’re easy-drinking session pale ale available on both cask and keg – but there are always tonnes of other beers beyond their core range that are worth your attention.
Sureshot
Sureshot proves that you can take the art of brewing seriously but still have a laugh, with silly beer names and a giant bear mascot manically grinning at you as you sip your beer.
What’ll it be – a pint of ‘Wait… What?’, a schooner of ‘Small Man’s Wetsuit’, or a third of ‘Be Polite and Comb Your Hair?’.
They’re known for their hop-forward styles but are always dreaming up new creations and collaborations, like a recent sour with Bundobust, and collaboration with inclusive football club Manchester Lacesm with a donation of each ‘I Thought She Was A Pisces’ sold going to the club.
This one’s off the Piccadilly Trading Estate and is under the railway arches, handily with Nell’s next door who will deliver you a pizza while you’re on your taproom crawl.
Balance Brewing & Blending
The final stop on the Beermuda triangle is Balance, who specialise in barrel-fermented sours.
The taproom itself is a real looker, with fairy lights festooned overhead, a deep burgundy bar, and persian rugs thrown all over the concrete floors.
The beers here are all funky and punchy and well worth ordering a few testers of before you make your final decision.
Whatever you order, it’s going to have good British roots and a beautiful flavour.
Inside The Faraday Pub, the Northern Quarter’s newest boozer

A brand-new pub has opened slap bang in the middle of the Northern Quarter – take a look inside The Faraday.
This pub is just off the bustling Stevenson Square and has bags of stuff on offer.
Spread across two floors on the site that was previously 7Sins, you’ll find live music, games, cocktails, and of course plenty of pints.
The Lever Street venue has been totally transformed into a cosy space inspired by traditional British boozers.
We’re talking vintage pub mirrors, mismatched bar stools, wood paneled walls, deep burgundy leather banquette seating and a fresh lick of dark green paint.
And this smart pub has got the space to become a live music gem for the Northern Quarter, with live music every Wednesday to Sunday.
Downstairs, there’s still a wide range of games to keep you entertained, including pool tables (which are unlimited play for your booking), electric darts, and shuffleboard.
The Faraday’s drinks menu boasts loads of classic cocktails, including margaritas, old fashioneds (including a tequila version), and a selection of sours.

Inside The Faraday Pub
When happy hour rolls around (6pm til 10pm every evening but Saturday) you can get £5 drinks including pints of Guinness, and a selection of spritzes.
On draft there are fan favourites like Guinness, Mahou, Corona, Lowenbrau, Jubel Peach, Camden Pale, Kopparberg, and Camden Hells.
There’s a decent amount of outside seating for when the sun has got his hat on, too, with full sunshine in the afternoons.
The Faraday is open until 1am during the week, and 2am on Fridays and Saturdays.
It’s open now at 43-45 Lever Street in the Northern Quarter.
