A brand new restaurant from Manchester Chef of the Year, Shaun Moffat, and a small team of hospitality heavyweights is opening in the city centre.
The former Manteca, Hix and St. Leonards chef, who has gone on to earn even plenty of local acclaim thanks to his work at the Edinburgh Castle in Ancoats and most recently Maya in the Gay Village, is now set to embark on his own venture and will soon become the Chef Patron of a brand new concept.
Although there aren’t too many details just yet, Moffat and co. are promising to focus on two core principles: ‘Northern hospitality and thoughtful British cooking’.
Set to take the lead on Winsome Restaurant sooner than you think, should everything stay on schedule, Moffat and the new restaurant will be housed on Princess Street, adjoining the Whitworth Locke Hotel, as they cook to the masses from this historic corner of Manchester.

Winsome will be opening in the old Peru Perdu site, which sadly closed back in May 2024 after being given notice by the landlords next door.
The South American spot had proved a popular one for half a decade but has sadly been vacant ever since, but neighbours Foundation Coffee and the aforementioned Whitworth remain frequented city centre destinations.

With that in mind, the man voted ‘Chef of the Year’ at the most recent Manchester Food and Drink Awards and who notched a spot in the UK’s Top 50 Gastro Pubs during his time at the Castle, will be hoping to welcome diners back into the building and continue his success at Winsome.
The aim, more specifically, will be to bring local and seasonal produce and deliver a regularly changing menu that showcases the very best of ingredients, all with a comforting familiarity and a touch of Moffat’s own modern flair. But there are plenty more brains and pedigree behind this new opening too…
The drinks programme at Winsome will be led by none other than Tom Fastiggi, who previously worked at the industry-leading and equally award-winning Schofields. There will be a selection of hotel classics and familiar drinks alongside a strong no and low selection and some of Fastiggi’s own creations.

Wine will also be a focus with a sommelier served and curated list focusing primarily on old-world wines delivered again with Winsome’s laidback personality and flair.
Fastiggi and the Winsome team will also take over Whitworth’s stunning Atrium hotel bar (pictured above), providing a space for diners, hotel guests and passers-by to enjoy memorable bar food paired with delicious cocktails in the quaint setting of the Locke’s iconic glass structure.

Completing the team will be Owain Williams, founder not only of the renowned Belzan in Liverpool but, more importantly for us Mancs, Kampus’ Madre and Medlock Canteen over on Deansgate, among a number of other notable hospitality venues across the Northwest.
Quite the trio of talent with a wealth of expertise behind them.

Inside Chotto Matte, the glittering new rooftop restaurant with staggering views of Manchester

Chotto Matte has given a glimpse inside its impressive new restaurant space in Manchester today, complete with a huge rooftop terrace and 360º views of the city centre.
Diners will soon be able to sit up here on top of the No.1 St Michael’s, tucking into a menu of premium Nikkei cuisine while overlooking the magnificent Manchester Town Hall, now peeping out from behind its scaffolding.
The new Chotto Matte will debut a brand-new concept, too – Claude’s is a new Mexican-inspired sky bar, serving Mexican nibbles like black bean tostadas, Wagyu beef birria sliders, and grilled chicken quesadillas, as well as a collection of 250+ tequilas and mezcals.
The main Chotto Matte food menu, crafted by group executive chef Jordan Sclare, alongside founder Kurt Zdesar, focuses on Japanese and Peruvian flavours, with five distinct sections – sushi bar, tempura, robata, sautée and pastry.
The space spans 20,000 sq ft across the 10th floor of Gary Neville’s landmark St Michael’s development, and has been decorated with graffiti-inspired interiors and contemporary art installations.
Local artists who have been called in to help include Carla Raads, who has transformed the bathrooms into a glowing UV mural (the rest of the loos are fully mirrored, for even further wow factor).
But the real standout feature is the 348-capacity rooftop terrace, open all year round and with its own dedicated bar as well as a stage for live entertainment.
Back inside there are two private dining rooms, including one with direct access onto the rooftop.

Beautiful Stockport cocktail bar launched by Blossoms frontman announces closure

Bohemian Arts Club, the stunning cocktail bar launched by Blossoms frontman Tom Ogden, has announced its closure.
The Stockport venue was opened by Tom and his wife Katie back in 2023, taking over a formerly derelict three-storey building on Coopers Brow.
While the ground floor was initially home to Katie’s thriving hair salon, Bohemian Salon, the top two floors were transformed into a vintage, design-led cocktail bar filled with mirror-tiled doors and heart-shaped chairs hand-made by Katie’s mum and dad.
But today, Bohemian Arts Club has announced that the building will enter in a ‘brand-new chapter’ – and that means the closure of the cocktail bar.
Bohemian Salon is in such high demand that they have decided to expand it into the top two floors.
The bar shared: “After an amazing 2½ years, we’re excited to share that the building is about to enter a brand-new chapter! With the salon thriving and in such high demand, Bohemian will be expanding upstairs into the two floors above.
“Although this means the bar will be closing and this brings sadness, we also couldn’t be happier to see the space continue to flourish and evolve. It’s been such a joy to share weddings, birthdays, anniversaries, and countless celebrations with you all—we’ll always treasure those memories.

Fans have been sharing their sadness at the news of the bar closure, with one writing: “Gutted about this, you do the best cocktails in Stockport – would love you to open in a new space.”
Another wrote: “Aww we’re gutted the bar is closing! We’re huge Blossoms fans and got engaged at the bar in March 2024 so it will forever be a special place for us. Good luck with the expanding salon!”
And someone else posted: “Noooo my cocktails. Great news for the salon though guys.”
